Recipe: Easy-Bake-Molten-Cake

Now I am a huge fan of making things from scratch - cakes, cookies, soups, casseroles....but sometimes you just don't have the time. When you need something fast I don't think there's anything wrong with going the pre-packaged route or as the popular Food Network show calls it "Semi-Homemade". Tonight I made Mini Molten Cakes (with a little help from my friend Betty Crocker.

Ingredients: Betty Crocker Molten cake mix, 2 eggs, 1/3 C butter, handful of flower and muffin tins

Grease and flour muffin tins
Combine butter and chocolate chips (included in Betty Crocker box)
Melt together - NO LUMPS
Add cake mix
Spoon into tins - bake 425* for 12-14 minutes

Let rest 10-15 minutes (to prevent mouth burning)
Serve while warm (can be reheated 10-15 seconds in microwave).

Box or not - these were rich and warm...just melting in your mouth. Oh! And don't forget a glass of milk! :)
