We got most of us together (about fourteen of us) for a family potluck dinner, gift exchange and dip in my condo's newly redone pool (nothing fancy but at least the pool is no longer crumbling under your feet).<br />
<br />
We had crock pot lasagna, Hawaiian mac salad, fruit salad, chicken and rice baked mini burritos and more desserts than you could hope for (2 fruit pies, a lemon bar, chocolate ice cream with peanut butter sauce and a chocolate cake). - we asked each of the four birthday people what they wanted as their "special something".<br />

My youngest sister (who turns 21 TODAY!) asked for a chocolate cake with chocolate frosting and strawberry filling. What my baby sister wants she gets. So here's what I did for her.<br />

I was bored last weekend. It was cold and rainy and I just wanted to bake something. So I looked up a cocoa powder brownie recipe - something I knew I had the ingredients for. I'm so glad I did because these turned out to be THE BEST brownies EVER. </div>

I found this recipe online and thought I'd give it a try, give her my thoughts and then encourage her to try it herself.</div>

2 Cups McCormick Beer Batter mix<br />
1 Can of Beer (you can use water or juice or any liquid)<br />

1 ½ tablespoons oil<br />
2 teaspoon ginger (minced)<br />
5 tablespoons garlic (minced)<br />
1 teaspoon salt<br />
4 1/2 tablespoons honey (I used 6 but it was too sweet)<br />
3 teaspoon rice wine vinegar<br />
1 cup water<br />
2 teaspoon cornstarch (mixed with 3 teaspoon water)<br />
Sesame seeds (for garnish)<br />
<br />
Step 1: In a large bowl mix all batter ingredients together until smooth. Add the chicken to the batter tossing to coat.<br />
<br />
Step 2: Heat a deep fryer to 350 degrees. Fry chicken bits in patches for 2 minutes or until batter becomes firm. Drain on paper towels.<br />
<br />
Step 3: To make the sauce. Heat 1 ½ tablespoons of oil in your wok. Add garlic and ginger and stir fry for 30 seconds. Add salt, honey, vinegar, and water. Mix well. Combine 3 teaspoon of water with 2 teaspoon of cornstarch. Add to the sauce and Simmer for 2 minutes.<br />

Step 4: Coat chicken with the sauce and garnish with sesame seeds. Serve with white rice.<br />

I also didn't toss the entire batch of chicken in the sauce but let people drizzle however much they wanted on their own plates (keeps batter from getting soggy).<br />

It turned out pretty good. A little sweet (added too much honey so I've reduced it on the above ingredients).<br />

The pesto sauce was fresh and you could taste every individual ingredient. It was just a little heavy on the walnuts - which I'm not a huge fan of.</div><br />

I hated spinach growing up, but mostly because of HOW my mother would prepare it. She loves it sauteed and wilted with no life left in it and bathed in butter and salt. I remember just swallowing it whole to get it down. Now, however, as an adult I've realized I like FRESH spinach. Spinach salads, on sandwiches, even slightly wilted in pastas. When I lived in San Diego my go-to place was <a href="http://www.spreadtherestaurant.com/">Spread</a>, in North Park, they had a savory french toast that was killer. </span><span style="color: #20124d;">When I was in school it was <a href="http://www.cucasmex.com/">Cuca's</a> and their chicken rice burritos; I am still such a fan that when my aunt came up last summer we made her bring some with her. Peel, core and dice up apples - place right into 9x13 nonstick cake pan. Sprinkles sugars and cinnamon on top and mix well. Begin to preheat oven to 300 degrees.<br />

2 pouches Betty Crocker Oatmeal Cookie mix<br />
1 C butter, melted<br />
1 tsp cinnamon<br />

Melt butter. Add cookie mix and cinnamon to butter - mix well. Add half of topping (squeeze between hands to create larger "crumble" like top) to top of apples.<br />
<br />
Bake at 300 degrees for 1/2 hour.<br />
<br />
Add remaining topping and put back in oven for another 20 minutes. Crisp should be bubbling and topping browned. Let cool slightly before serving (Also good cold the next morning)<br />

<u>Ingredients:</u><br />
6 whole pork chops, medium-to-thin<br />
2 TB olive oil<br />
2 TB butter + 1 additional TB<br />
salt & pepper<br />
1 1/2 C red wine<br />
1/2 C beef broth (more if needed)<br />
1 whole bay leaf<br />
1 TB balsamic vinegar<br />
18 whole, peeled, cloves<br />

<u>Directions:</u><br />

Salt and pepper both sides of the pork chops and sear them on both sides until they're nice and golden, about 2 minutes per side. (No need to completely cook the chops at this point.) Remove the chops from the skillet and set aside.</div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Reduce the heat to medium-high, then throw in the whole garlic cloves. Stir them around and cook them for several minutes, or until they get nice and golden brown.</div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Pour in the red wine, then add the bay leaf. Stir around and let it reduce, raising the heat if necessary. Cook the sauce for several minutes, or until it's nice and reduced and thick.</div><br />

Allow the chops to cook in the liquid for a few minutes, then pour in the balsamic. Shake the pan to get it to distribute, then cook for a couple more minutes, or until the pork chops are done.</div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Remove the chops from the pan once more, then let the sauce reduce a little more if needed until it's very thick and rich and the garlic is soft. Swirl in 1 tablespoon of butter and sprinkle in a little salt and pepper.</div><div style="text-align: justify;"><br />

</div><div style="text-align: justify;"><u><b>Goat Cheese, Fig and Bacon Flat bread</b></u></div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Jenna has her own <a href="http://www.eatliverun.com/the-best-pizza-dough/">pizza dough recipe</a> - but if you're like me, you don't have time to make your own pizza dough on a busy Wednesday night. I've found that Tandoori Naan makes for great flat bread pizza crust. So when I finally get around to make this that's what I'll be using.</div><br />
<u>Ingredients:</u><br />
Pizza Dough <i>(Or premade flat bread)</i><br />
4 slices of bacon, cooked crisp and chopped<br />
1 small log of soft goat cheese<i> (I think I'll pick an garlic cheese)</i><br />
10 fresh figs, sliced in half <i>(If you're like me make sure to buy extra because of "accidental" eating)</i><br />
1 TB extra virgin olive oil<br />
1 bunch of arugula<br />
Sprinkle of sea salt<br />
<br />
<u>Directions:</u><br />
<br />
Preheat oven to 450 degrees<br />
<br />
Prepare pizza dough <i>(if you are using precooked flatbread skip down to </i><b style="color: red;">*</b><i>)</i><br />
<br />
After preparing the dough, divide it into four parts on a floured surface. Then divide those four parts in half so you have eight little balls of dough.<br />
<br />
Roll each small dough ball out to a circle (you can probably just stretch the dough) and <b style="color: red;">*</b> top with goat cheese crumbles, bacon crumbles and two sliced figs.<br />
<br />
Drizzle a little olive oil over each.<br />
<br />
Place flat breads on a lined baking sheet, reduce oven temperature to 425 degrees and bake for 12-15 minutes. After baking, top with arugula, another drizzle of olive oil and a sprinkle of sea salt.<br />

1 pound chorizo, sliced on the diagonal into 1/2-inch slices<br />
1 1/2 cups thinly sliced onion<br />
1 tablespoon minced garlic<br />
1/2 cup dry (fino) sherry<br />
1 tablespoon Spanish paprika<br />
2 teaspoons salt<br />
1 teaspoon freshly ground black pepper<br />
1 1/2 pounds peeled and deveined raw medium shrimp<br />
3 tablespoons lemon juice<br />
2 tablespoons minced parsley leaves<br />
Crusty bread, for serving<br />

<u>Directions</u><br />

<div style="text-align: justify;">In a large skillet or cazuela, heat 1 tablespoon of the olive oil and saute the sliced chorizo until it begins to brown around the edges, 7 to 8 minutes. Add the onion and cook, stirring occasionally, until they are caramelized around the edges and softened somewhat, 4 to 6 minutes. Add the garlic and cook, stirring, for 1 minute. Add 1/4 cup of the sherry and cook for 1 minute. Add the shrimp, paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper, and cook, stirring occasionally, until pink and cooked through, about 4 to 5 minutes. Add the remaining 1/4 cup of sherry and 1/4 cup olive oil, lemon juice, parsley and remainder of the salt and pepper; stir to combine and remove from the heat. Serve immediately, on small plates with any accumulated cooking juices spooned over the top. 1 tsp Pumpkin Spice Mix<br />
Zest of 1/2 lemon<br />
2 medium apples, peeled and cored<br />

<u>Directions:</u><br />

Step 1. Beat baking mix, egg and milk with rotary beater until smooth. Add pumpkin pie spice and lemon zest to batter and mix until incorporated.<br />
<br />
Step 2. Core and cut apples crosswise in 1/8-inch slices.<br />
<br />
Step 3. Using a toothpick dip slices into batter. Cook on hot griddle until golden brown, turning once. Serve hot with apple cider syrup.<br />

</div><div style="text-align: justify;">Finally I found the <a href="http://www.thatsmyhome.com/bakers/strawberry-souffle-pancakes.htm">one</a> I think I'm going to try this upcoming weekend (I promise to share how it turned out)...I've also made changes to the recipe below based on what DDD showed being done.</div><br />
3 eggs separated<br />
1/2 cup half and half<br />
1/4 cup flour<br />
1 pinch salt<br />
1 1/2 tablespoons butter, melted<br />
1 tablespoon grand marnier <i>(or whatever liquor you want)</i><br />
1/2 cup strawberries + 1 tbl. sugar <i>(or whatever fruit you want)</i><br />

Preheat broiler. <br />

<div style="text-align: justify;">Beat two of the egg yolks with the half-and-half (reserve the third yolk for another purpose). Add the flour slowly, stirring just enough to combine. Stir in the sugar, salt, melted butter and Grand Marnier. </div><div style="text-align: justify;"><br />

</div><div style="text-align: justify;">Heat a lightly greased 8-inch nonstick ovenproof skillet, or a heavy cast-iron skillet, over moderately high heat or until oil bubbles.</div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Pour the batter into the pan. Reduce the heat to medium and cook until bottom of the pancake is browned and bubbles appear around the edges, for 5 to 8 minutes. Arrange the remaining berries gently on top of the batter. </div><div style="text-align: justify;"><br />
</div><div style="text-align: justify;">Place the pan 4 to 5 inches below the broiler and cook until the top of the pancake is brown and the center is just set but still soft. </div><div style="text-align: justify;"><br />
