Cupcake 911

To my fellow foodies and sweet tooth comrades, 

I am becoming over whelmed when I Google "cupcake". I need your assistance. Send me your favorite, your tried-and-true, cupcake recipes.

I'm not looking for something as simple as a chocolate cupcake with chocolate frosting combo.

I'm not looking for something so complex it will take me five tries to even pretend to understand what your recipe is telling me to do. 

What I am looking for is something light, fresh - perhaps berry or other fruit focused (though I'm not opposed to traditional chocolate/vanilla variations) - that would be perfect for an afternoon garden party (adults not children in attendance).

Send me links or put the whole recipe in the comment box. 

Who knows?

  1. Honey Cupcakes

    This recipe for honey cupcakes was created by White House executive pastry chef Bill Yosses. http://www.all-about-cupcakes.com/honey-cupcakes.html

    Cupcakes: 1/4 cup softened butter
    1/4 cup sugar
    3/4 cup honey
    2 eggs
    1/2 cup buttermilk
    1/2 tsp. vanilla
    2 cups all-purpose flour
    1 Tbsp. baking powder
    1/4 tsp. salt

    Honey Icing:
    2 cups powdered sugar
    1/2 cup honey
    3 Tbsp. lemon juice

    1. Preheat the oven to 350C (175F).
    2. Line a 12-cup muffin tin with cupcake papers.
    3. In a stand mixer, cream the butter and sugar until light and fluffy.
    4. Mix in honey, eggs, buttermilk and vanilla.
    5. Combine the flour, baking powder and salt. Mix into the batter until just blended.
    6. Scoop the batter into the cups evenly.
    7. Cupcakes are ready when a skewer inserted in the center of a honey cupcake comes out clean or the tops spring back when lightly pressed, about 20 minutes.

    To make the icing:
    1. Stir all ingredients over medium heat until sugar is dissolved.
    2. Pour over cupcakes.

  2. So I think this weekend I'm going to give a Mexican Hot Chocolate cupcake with Cinnamon Buttercream frosting and an Berry filled Angel Food cupcake with lemon icing a try. I'll let you know how they go. Keep bringing on the cupcake suggestions!

  4. those sound delicious! I am new to baking, but I made muffins/ cupcakes (are muffins just not frosted?) from this box mix for cinnamon crumble cake and they made really tasty and moist muffins!:) it made just a little over 12 medium muffins.     I used the toothpic method- cooked the muffins til the toothpic came out clean in the middle. I think I filled the cups about 2/3 with the batter. There is even a muffin recipe on the box. :)
